One of the best ways to get off to a healthy start in 2010 is to get into the habit of eating breakfast.
Chef Jason Cichonski, with Lacroix at the Rittenhouse. shared some breakfast ideas on "Good Day."
Chef Jason made a delicious pineapple, yogurt soup with granola.
He explained there are several things you can do to improve your eating habits as the New Year begins. Chef Jason recommends making your meals at home and bringing them to work with you. He also encourages everyone to eat breakfast. It's a great way to get your metabolism going. Chef Jason says adding boiling water to granola is tasty. It has more flavor than oatmeal. And adding flax seed to meals will give you extra omega-3 fatty acids.
Pineapple-Yogurt Soup Recipe:
Ingredients:
1 Pineapple (peeled and core removed)
1 Banana
1 green apple ( skin on core removed)
2c nonfat yogurt
2 tbsp honey
1 1tbsp fresh grated ginger
1tsp Ground cardamom
Water to adjust consistency
Method:
Dice the fruit into 1 inch pieces; this is just so it fits in
the blender and purees nicer, no need for fancy knife cuts.
Add all the ingredients into a blender and puree 2 min. Even
if you think it's done let the blender run the full 2 minutes it
will make a difference in how light and smooth the soup comes out.
Remove from blender and reserve in an air tight container in the
fridge up to 4 days.
