Salads are a good way to keep the pounds off. But beware! Not every salad is good for you.
Here are some healthy summer salad recipes from fitness guru Kim Garrison:
#1 Spinach W. Hard Boiled Egg & Grilled Chicken Breast (Protein Power House)
Spinach
is super food because it's densely packed with vitamins and minerals,
especially iron. Add a hard boiled egg and 3 oz of grilled chicken
breast and you've got a protein rich salad packed with vitamins and
minerals.
Make a fun vinaigrette with some olive oil and balsamic vinegar!
# 2 Spring Mix (oak leaf lettuce, endive, radicchio, arugula,) W. Strawberries, Blueberries & Walnuts (Antioxidant Rich) Field
greens are delicate and delicious and offer lots of benefits that you
would expect from green leafy veggies (vitamins, minerals and
antioxidants) but when paired with sliced strawberries, blueberries and
walnuts (all super high in antioxidants, vitamins and fiber) you're get a
fresh, light summer salad that will flood your body with antioxidants.
Make a fun vinaigrette - puree' 3 strawberries - mix with 2 TBS of olive oil, and a pinch of salt!
#3 Roasted Vegetable Chopped Salad W. Romaine Romaine
lettuce is crunchy and delicious and very sturdy so I recommend having
fun with it. Roast some veggies on your grill - (zucchini, eggplant,
squash, asparagus, carrots). Coat the vegetables in a small amount of
olive oil and herbs, grill them, then chop them into small pieces and
add to your salad for a delicious alternative to the mixed vegetable
salad.
Add just a small amount of olive oil as your dressing
#4 Kale Salad W. Pine Nuts (vegan protein option) Kale
is an amazing food, super rich in antioxidants, and vitamins and
minerals. Remove the stems and chop into small pieces, massage it very
thoroughly to help soften it. Then toss in a small amount of toasted
pine nuts. Drizzle with a fresh lemon juice vinaigrette.
