ANDREW ZIMMERN'S DUCK KIDNEY RECIPE
Sauteed Duck
Kidneys
Serves

1# duck
kidneys
1 cup flour seasoned with 1T salt
and 2t ground pepper
5T
butter
3 minced
shallots
4T minced
parsley
2T minced
tarragon
1T lemon
juice
3/4 cup white
wine
Toss kidneys in seasoned flour and
remove
Brown over high heat in large sauté
pan with 2T butter
When browned, add shallots and
herbs, toss well, add wine.
When reduced to sauce consistency
add lemon, butter and toss
