
Michael's in midtown Manhattan has revamped its menu to include small plates, brick oven pizza and a tasty version of creamed kale.
We prepared the flavorful green on Tuesday.
Recipe:
Creamed kale
2# tuscan kale, washed-trimmed- blanched - chopped
4oz unsalted butter
4oz flour
1clove minced garlic
1tbsp minced shallot
16oz heavy cream
1cup of grated parmesan cheese
pinch of nutmeg, salt and pepper
making roux:
in a pot add butter, shallots, and garlic; when butter is completely melted.
slowly incorporate the flour w/ the butter mixture using a whisk.
cook it in medium temperature for 2 mins.
Add heavy cream and bring it to boil.
When the liquid is thickens up, add rest of the ingredients together.
Serve it hot as side dish.
It goes great with lamb, steak, pork or chicken.
